白萝卜牛肉包

参考毛毛妈的方子们:

面团:
1:中筋面粉(All purpose flour) 480克(3杯),加泡打粉(Baking Powder)2茶匙拌匀。
2:温水310克(大约1又1/3杯+1大匙),糖1大匙,快速发酵粉(fast rising yeast) 2茶匙,中筋面粉1大匙。
3:玉米油1大匙。

发面:

盆内放入1料拌匀后加入2料揉成大块面团,然后倒入15毫升玉米油揉成软面团。放在暖和的地方保温,等到面团发至原来的两倍大。


馅料:

4:瘦猪肉馅400克(Costco买的,extra lean ground pork)。

5:葱花6大匙,姜末2茶匙,盐2/3茶匙,糖1茶匙,万字牌生抽酱油3大匙,金兰老抽酱油1大匙,蚝油1大匙,香油1大匙,绍酒1大匙,素易鲜1/3茶匙(可省),生粉1.5大匙,白胡椒粉1/8茶匙。

6:白萝卜600克,去皮洗净,切细粒。

馅料:将所有4,5和6料放一盆里,然后用筷子搅上劲即成馅。


蒸:

包子:把发好的面团撒点干面粉揉成长条分成24小块,每份赶成中间稍厚周边薄12厘米直径的皮,加2.5大匙馅料打折包成包子。将做好的包子坯放入铺了层纸巾的烤盘上,放入烤箱内醒20-40分钟(时间长短根据气温不同调整,冬天可开灯保暖,看到包子长大50%就可以了。)。

将醒好的包子坯放入铺了湿布的蒸锅内。置炉上开大火,大火蒸15分钟,转中小火(电炉放4)蒸3分钟,最小火再蒸2分钟。离火等3分钟再揭盖。


煎:

将做好的包子坯放入铺了层纸巾的烤盘上,放入烤箱内醒20-40分钟(时间长短根据气温不同调整,冬天可开灯保暖,看到包子长大50%就可以了。)。煎锅放1.5大匙橄榄油,将醒好的包子坯放入煎锅。将煎锅置炉上开大火,加3/4杯水,盖上盖(图F)。水开后,转大中火(电炉放8)(这里可以加入一勺面粉水)煎至水快干(听到吱吱响声)。转中小火(电炉放4)煎3分钟,小火(电炉放最小火)再煎2分钟。离火等1-2分钟再揭盖,撒上熟芝麻和少许葱花即可。

烤箱预热475, 放进10寸cast iron煎锅一同预热。
2个鸡蛋搅匀,加半杯牛奶再次搅匀。 筛入半杯面粉,加一小撮盐(这里可以加点香草精或者nutmeg之类香料),搅匀
烤箱温度降到425,取出煎锅,用锅的温度融化1-2大勺黄油。把黄油晃到烤盘的四周。 慢慢倒入调好的面糊,不用再搅拌铺匀之类, 放入烤箱烤。 425度烤12分钟-20分钟,然后降到350度烤8分钟(每步的时间有待摸索)。烤的时候准备水果片, 以及草莓酱(草莓加热,碾碎,加点maple syrup拌匀)。 烤好后取出煎锅, 筛糖粉, 倒入水果/草莓酱,开吃。

Ingredients

  • 2 eggs
  • 1/2 cup milk
  • 1/2 cup sifted all-purpose flour
  • 1 pinch ground nutmeg
  • 1 pinch salt
  • 2 tablespoons butter
  • 2 tablespoons confectioners' sugar for dusting

Directions

  1. Place a 10 inch cast iron skillet inside oven and preheat oven to 475 degrees F (245 degrees C).
  2. In a medium bowl, beat eggs with a whisk until light. Add milk and stir. Gradually whisk in flour, nutmeg and salt.
  3. Remove skillet from oven and reduce oven heat to 425 degrees F (220 degrees C). Melt butter in hot skillet so that inside of skillet is completely coated with butter. Pour all the batter in the skillet and return skillet to oven.
  4. Bake until puffed and lightly browned, about 12 minutes. Remove promptly and sprinkle with powdered sugar.

  1. 1 Fifteen minutes before baking preheat the oven to 450°; have a pie plate or oven-proof skillet ready.
  2. 2 Whisk together the milk, flour, eggs, sugar and vanilla; put the butter in the pie plate or skillet and place the pan in the oven just until the butter is melted; with a brush coat the rim and entire inside of the pan.
  3. 3 Slowly pour batter into hot pan; bake for 20 minutes; reduce heat to 350° and bake another 8-10 minutes, until pancake is well-browned; remove from oven and sieve confectioners' sugar over the top; serve immediately with fruit spooned into the center of the pancake.
