红焖羊肉

家常红焖羊肉:

主料:羊肉500g(我选的羊肋排下面的肉),胡萝卜300g,洋葱200g,枸杞一小勺

调料包:葱姜,花椒,八角,茴香,桂皮,辣椒,山楂干

其他调料:啤酒一罐,料酒一大勺,老抽一大勺,生抽一小勺,盐一小勺,糖一小勺

做法:

1】羊肉洗净沥干水分切1cm见方的块

2】调料包的材料放入调料包,胡萝卜和洋葱切和羊肉相仿的块

3】锅内烧热油,倒入羊肉翻炒变色,把料酒,糖,盐,生抽,老抽倒入炒匀

4】把炒匀的羊肉转入高压锅,倒入啤酒,再加入和啤酒等份的开水,加入调料包

5】高压锅上气后转中小火压一小时

6】压好的羊肉再次转到炒锅,倒入胡萝卜和枸杞中小火焖煮30分钟,出锅前五分钟倒入洋葱

Panettone

材料:

1 cup milk
2 eggs
½ cup butter, cut up
3 ¾ cup bread flour
½ cup sugar
1 tb orange peel (from dry herb section at super market)
½ tsp salt
4 ½ tsp yeast
1 cup dried cranberries (can be dried cherries)

½ cup raisins (golden raisins are preferred)
¾ slivered almonds, toasted (pine nuts are preferred)

Glaze:
1 egg, beaten + 1 tb water

把上面9样东西按面包机要求的程序放面包机, 按dough setting.

用一个8X3的圆烤盘, 里面喷上油, 再围上一圈烤纸,

面发好了拿出来, 把气挤压, 排掉, 同时加葡萄干和杏仁, 揉匀, 做成一圆球, 把它放入盘里, 盖上一块布,放暖的地方,发孝1小时,

刷上蛋液, 进350F烤箱, 放在倒数第二烤架上, 烤55-60分钟, 最后15分钟盖上一张锡纸怕表面烤焦, 用竹签插一下,出来干净, 就好了. 放架上冷卻10分钟, 再从盘里取出,再彻底冷却.

注: 干果和果仁,可以用自己喜欢的.

牛仔骨面

猪肋排沿肋间隙切条,冷水中浸泡两小时去血水。炉子上同时烧上两个锅。第一个锅里烧水准备烫排骨,第二个锅(高压锅)里加水,八角,桂皮,草果,香叶,陈皮,姜,葱,甘草,料酒,生抽,老抽,糖,花椒,干辣椒,煮开。第一个锅基本烧开后,下排骨烫一下去血水,用漏勺捞出,放入第二个锅里。加高压锅盖压10分钟(一般锅也无妨,烧到肉酥),熄火,消气后,揭开锅盖大火收干汁即可

OATMEAL CRANBERRY WHITE CHOCOLATE CHUNK COOKIES

OATMEAL CRANBERRY WHITE CHOCOLATE CHUNK COOKIES
RATE THIS RECIPE
INGREDIENTS:

2/3 cup butter or margarine, softened
2/3 cup brown sugar
2 large eggs
1 1/2 cups old-fashioned oats
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 6-ounce package Ocean Spray® Craisins® Original Dried Cranberries
2/3 cup white chocolate chunks or chips

DIRECTIONS:

Preheat oven to 375ºF.

Using an electric mixer, beat butter or margarine and sugar together in a medium mixing bowl until light and fluffy. Add eggs, mixing well. Combine oats, flour, baking soda and salt in a separate mixing bowl. Add to butter mixture in several additions, mixing well after each addition. Stir in dried cranberries and white chocolate chunks.

Drop by rounded teaspoonfuls onto ungreased cookie sheets. Bake for 10-12 minutes or until golden brown. Cool on wire rack.

Makes approximately 2 1/2 dozen cookies.

琪琪版的云腿月饼

下面是琪琪的食谱,
馅:
1、 将400克净瘦的PROSCUITTO火腿切成绿豆大的小丁。
2、 将4大匙面粉在小锅中炒熟。
3、 在火腿丁中加入炒过的面粉、4大匙白糖和3-4大匙蜂蜜拌和一起即可。

面皮:

材料:ALL PURPOSE 2 CUP, 水 1/4CUP+2大匙 ,SHORTENING 3/4CUP,糖粉2大匙,蜂蜜2大匙。

做法:
1 、先取 1/4CUP 面粉和1/4CUP+2大匙的水放到盆中用筷子搅拌匀。
2、在面糊中加入SHORTENING,糖粉和蜂蜜用手提MIXER搅打3-5分钟,直到完全混合没有颗粒,象打发的奶油一样。
3、加入剩下的面粉,揉和成光滑柔软的面团,大约象耳垂一样软即可。
4、切成8个小团,覆盖好就可以开始包成圆球稍稍按扁。
5、烤箱预热400度,下面再垫一个装了水的烤盘烤10-15分钟到表面变黄即可。烤的时候最后多CHECK几次,很容易烤过头。

适合美国人的巧克力巧克力蛋糕

蛋糕体: 实验室一个人的好方子(如下)。2片蛋糕中间加cherry jam。

Frosting: 1小盒heavy cream(235ml)烧开,倒入等量或更大量的巧克力碎中,搅搅搅到巧克力融化。稍微冷一下,就可以往蛋糕上倒了。据说这里用的巧克力质量越好最后出来的味道越好(dark或者semi-sweet)。恩 对了,还可以加点butter(3 tablespoons),成品表面能亮一些。


Black Magic Cake

Mouthwateringly moist with mysterious dark depths of flavor; this is our most requested cake recipe.

  • 2 cups sugar
  • 1¾ cups all-purpose flour
  • ¾ cup HERSHEY'S cocoa
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup strong black coffee or 2 teaspoons powdered instant coffee plus 1 cup boiling water
  • 1 cup buttermilk or sour milk*
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract

Heat oven to 350ºF. Grease and flour two 9-inch round baking pans or one 13 x 9 x 2-inch baking pan. In large mixer bowl, blend sugar, flour, cocoa, baking soda, baking powder and salt. Add eggs, coffee, buttermilk, oil and vanilla; beat on medium speed of elec tric mixer 2 minutes (batter will be thin). Pour batter into prepared pan. Bake 30 to 35 minutes for round pans, 35 to 40 minutes for rectangular pan or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pans to wire racks. Cool com pletely. Frost as desired.

10 to 12 servings.

∗To sour milk: Use 1 tablespoon white vinegar plus milk to equal 1 cup.

Earl Grey Tea Cookies Recipe


Earl Grey Tea Cookies Recipe(Adopted from marthastewart) 

2 cups all-purpose flour, plus more for dusting
2 tablespoons finely ground Earl Grey tea leaves, (from about 8 bags)
1/2 teaspoon salt
2 (8 ounce) sticks unsalted butter, softened
1/2 cup confectioner's sugar
1 tablespoon finely grated orange zest

1.Whisk together flour, tea, and salt in a small bowl; set aside.
2.Put butter, sugar, and zest in the bowl of an electric mixer. Mix on medium speed until pale and fluffy, about 3 minutes. Reduce speed to low; slowly mix in flour mixture until just combined.
3.Divide dough in half. Transfer each half to a piece of parchment paper; shape into logs. Roll in parchment to 1 1/4 inches in diameter, pressing a ruler along edge of parchment at each turn to narrow log and force out air. Transfer in parchment to paper-towel tubes; freeze 1 hour.
4.Preheat oven to 350 degrees. Cut logs into 1/4-inch-thick slices. Space 1 inch apart on parchment-lined baking sheets.
5.Bake until edges turn golden, 13 to 15 minutes. Let cool on sheets on wire racks.

*You can grind the tea leaves in a small food processor or with a mortar and pestle.

INGREDIENTS (Nutrition)

  • 4 eggs
  • 1 1/4 cups vegetable oil
  • 2 cups white sugar
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 3 cups grated carrots
  • 1 cup chopped pecans
  •  
  • 1/2 cup butter, softened
  • 8 ounces cream cheese, softened
  • 4 cups confectioners' sugar
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans

DIRECTIONS

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
  2. In a large bowl, beat together eggs, oil, white sugar and 2 teaspoons vanilla. Mix in flour, baking soda, baking powder, salt and cinnamon. Stir in carrots. Fold in pecans. Pour into prepared pan.
  3. Bake in the preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
  4. To Make Frosting: In a medium bowl, combine butter, cream cheese, confectioners' sugar and 1 teaspoon vanilla. Beat until the mixture is smooth and creamy. Stir in chopped pecans. Frost the cooled cake

蟹味蛋炒虾


蟹味很浓,虾仁嫩滑,很好吃。

用料:
1:白虾545克,去肠去壳洗净沥水,加盐1/3茶匙,白胡椒1/8茶匙,生粉1大匙,香油1茶匙,拌匀腌20分钟备用。
2:鸡蛋3只,姜蓉1大匙,镇江香醋1大匙,盐1/3茶匙,水1大匙。
3:玉米油3大匙。
做法:
先将虾仁拌上剩余的1料腌好(图A),2料放一小盆里(图B),然后搅拌均匀(图C)备用。

不沾锅放玉米油3大匙,置炉上开大中火,放入将腌好的虾仁(图D),炒至八成熟,放入蛋汁(图E),轻轻翻炒至蛋汁凝固,虾断生(图F)即可。
